Sourdough Soft Pretzels

I did not make these pretzels, but my husband does. He makes them on occasion for pot lucks, or special occasions and everyone gives me the credit for how yummy they are because they just can't believe he made them! It's fine, I'll shamelessly take the credit hah!

This post was written by the lady while the husband did all the work. Occasionally the lady behind these words would yell 'Stop for a pretty picture!' and so here we have this blog post!

In the recipe which you will find below, I have broken down the steps into three different paragraphs because although these pretzels are simple to make, there are a lot of steps and I don't want to discourage anyone who has never tried to make Sourdough Soft Pretzels.


Sourdough Soft Pretzels | Roll out the dough into a 8"x12" rectangle and divide into 1" strips.

This recipe uses a Sourdough Starter rather than using commercial active dry yeast. If you don't have one, I have a post right here that will show you how to make your own Sourdough Starter.

See, hubs is making the pretzels! I guess the secret is out! 

Actually, here's a funny story, feel free to scroll if you are only here for the pretzels hah! 

I heard gossip about myself that I was a mean wife because I never left my husband cook or bake and he enjoys it so much. Were they ever wrong though, he works 5 out of 7 days and on those days he is home, I'm begging him cook to for us because momma needs a break sometimes! It's funny how people claim to know so much about other people!

Ok, back to the pretzels. I don't have any photos of the baking soda bath because it's a quick dip until they float up, then you need to slap on the egg white and salt real quick. But it is super simple, don't doubt yourself.

We have made a variety of toppings for our pretzels. We have used the classic sea salt, but you could also mix up some cinnamon, brown and white sugars for a sweeter Sourdough Soft Pretzel, or add a little garlic butter once they are baked!


Sourdough Soft Pretzels

Ingredients

3 cups of unbleached flour
1 cup of whole wheat flour
1 tsp of sea salt
1 cup of active sourdough starter
1 cup of warm water
1 tbsp of extra virgin olive oil
2 tablespoons of baking soda
4 litres of boiling water
1 Egg White
Coarse Sea Salt

Method

Mix the flours and sea salt together using a whisk in a large bowl.
Create a well in the middle of the dry mixture to add in the starter, water, and oil.
Knead for about 7 minutes until smooth.
Shape the dough into a ball and place it in an oiled bowl in a warm area to rise for about two hours.

Once the dough has almost doubled in size, punch the batter down & knead it for 5 minutes on a floured surface.
Roll the dough out into a 8” x 12” rectangle.
Slice it into 8 one inch wide strips of dough so you have 8 strips.
Roll them into snake-like shapes.
Cover with a towel and let rise for another thirty minutes.

Bring the water and baking soda to a boil in a large pot.
While the water comes up to a boil, form the pretzel shape with each piece of dough. 
When the water is at a rolling boil, add each pretzel one at a time to the boiling water.
When the pretzel rises to the top of the pot remove it and place it on a wire rack to cool.
Immediately brush it with egg white and dust it in coarse sea salt.
Continue with the rest of the pretzels.
Place on a lined baking sheet.
Bake at 450F for 20 minutes or until golden.

Additional notes

> If your dough is too dry, add an additional tablespoon of warm water to form the dough.
> To oil your bowl, remove the dough and lightly grease the bowl with oil.
