I love to bake these cookies with my kids. Well, I love to eat cookies, especially these cookies, and baking them with the boys just makes it more fun, and messy. But more fun than messy.
Because we want to become as self sufficient when it comes to our food, I love that this recipe is made with milk, eggs and lard. All ingredients we can one day harvest from our off grid tiny homestead!

What I love most about this cookie recipe I have been making for years is that they are chewy and they STAY chewy for days, if they last that long. Be careful not to over bake them or you'll have crispy cookies. Every oven is different, some are hotter than others or cooler than others. Once the tops and edges just start to go golden, they are done and pull them out of the oven.

This recipe makes just over 2 dozen, so we usually take the leftover and bake a giant cookie after we have baked the first two dozen cookies. You could also take half your cookies and freeze them for another day to restrain your wild ones from cleaning off the whole batch!

This isn't a really crunchy or healthy recipe, it uses a lot of flour, shortening and sugar. But we only make these cookies a couple time a year so I'm okay that! I also add an obscene amount of chocolate chips and we all love it!

When dropping the cookie dough onto a baking sheet, I don't bother using parchment paper because the lard in the recipe makes them not stick to the pan. But for easy clean up, feel free to use it if you like!

Chewy Chocolate Chip Cookies
Ingredients
3/4 cup of lard1 1/4 cup of packed brown sugar
2 tbsp of milk
2 tsp of vanilla
1 large egg
2 cups of all purpose flour
1 tsp salt
3/4 tsp baking soda
1 1/2 cups of semi sweet chocolate ships
Method
Preheat oven to 375F.In one bowl, cream together lard, brown sugar, milk, and vanilla until well mixed.
Beat in egg until just combined.
In a separate bowl, combine flour, salt and baking soda.
Combine both bowls together until just mixed.
Stir in chocolate chips.
Drop spoonfuls of cookie dough onto a cookie sheet about 10cm apart.
Bake for 7 to 10 minutes, or until the tops and edges just become brown.
Cool for 3 minutes before placing on a rack or cool dinner plate to cool.
