Carrot Cake Overnight Oats

We are loving these overnight oats because my children are old enough that they can grab it out of the fridge and feed themselves breakfast! It's amazing to get a little more me time in the morning!

Carrot Cake Overnight Oats

Soaking your oats and nuts helps to break down the phytic acid naturally found in these foods. This is helpful because it allows your body to better absorb minerals like zinc, magnesium and calcium.

Enough with the science though, let's get to the recipe! I like to add a little extra shredded carrots and pecans before digging in to garnish.

Carrot Cake Overnight Oats


Ingredients

1/2 cup rolled oats
3/4 cup of almond milk
2 tsp of chia seeds
1 tbsp of maple syrup
1/2 tsp of cinnamon
1 tbsp of grated carrot
1/2 tbsp of shredded unsweetened coconut
1 tsp of chopped pecans
1 tsp of raisins

Method

Combine all ingredients in a jar or bowl.
Place in the fridge overnight.
In the morning, mix it up and add additional pecans and grated carrot to garnish.
Enjoy!
